I get it. This information is busting at the seams on social media and you can google any workout video, natural cure, or healthy dinner recipe. Although trained in holistic health, I am certainly no expert when it comes to health. I want to share with others what I have learned works for ME and MY family, so hopefully it can help you gain insight into yours. I get lots of questions about how to enjoy COnutButter, what I like to eat, what supplements I take, and how to cure certain ailments. Without further ado – I wanted to share a dope pumpkin frosty (just a really thick and cold smoothie – mimics a frosty texture) recipe that just so happens to contain most of my favorite pantry items. Guys, it doesn’t have to be fall to enjoy pumpkin. I use an organic boxed variety of pumpkin throughout the year that is packaged at peak. So why the pumpkin smoothie in June? Well, my husband is a Type 1 Diabetic and an acupuncturist recently told him to eat pumpkin. EVERY. DAY. Apparently, the vitamins, minerals and low glycemic index of pumpkin support the metabolism of a T1D, and are a super rich source of antioxidants vitamin A&C which protect eye health and boost immunity. Also, eastern medicine highly regards pumpkin and pumpkin seed extract to treat early onset of T1D and T2D and can even regenerate damaged pancreatic cells (that produce insulin). This is cool shit. If you eat enough of it, you actually start to get a orange glow (hello beauty food!). Anyway, we have been eating this smoothie all week. My husband claimed this to be the “BEST SMOOTHIE EVER.” This poor dude chokes down my greenest concoctions, so maybe its not saying that much…but honestly, its good. and satisfying. and taste like dessert. Just make it. You’ll love it. Even if you don’t like pumpkin. Well, maybe not? IDK.
Pumpkin Almond Butter “Frosty”
Serves 1 (easily doubles)
1/2 cup cooked organic pumpkin (I used this one from whole foods)
1 TBLS Organic Coconut oil (I buy mine from Costco but love this brand)
1 TBLS organic brown flax seed (I buy 365 brand and grind at home)
2 TBLS Maple Cinnamon COnutButter
1 T Collagen Hydrolysate (I buy this brand on Amazon)
1 cup of organic Almond Milk (water will work just fine, or any milk, if its non-dairy make sure it doesn’t contain that carcinogenic carageenen bullshhhhhh….)
1 scoop of vanilla protein powder of choice (This is one of my standby favs)
1/2- 3/4 cup Ice (blended in last)
Mix everything but ice together in a high speed blender until well mixed. Switch off, add the ice, and blend again on high until super smooth and frosty. You can serve it right away or put it in the freezer for about 10 minutes to get even thicker. Top with whatever your heart desires, but we like hemp seeds, more ground flax, cinnamon, the best crack worthy granola brand (I blame you for my addiction mom), coconut or coconut butter, and DEF more COnutButter drizzled.
Makes a great post-workout meal and is super delicious. I’ve been known to immediately make another because 1 wanted more…
